It isn’t until you start living with someone until you truly realize how different you are.

I moved in with my boyfriend around 8 months ago and it took less than a week to discover how different our ways of living are - especially when it comes to the foods we eat.




















Don’t get me wrong - I love living with Taylor! It took a few tweaks to adjust and now I wouldn’t have it any other way.






















In the morning, Taylor and I are both always in the kitchen first thing to make breakfast. We both typically go for something full of protein, fiber and a complex carbohydrate. While I reach for something that is usually vegan or plant-based, he loves eggs, dairy & meats. 

It was until overnight oats made an appearance that we found a quick breakfast we both enjoy!




















The first time I made Taylor overnight oats he instantly became obsessed with them. I have discovered so many ways to make them that they never get boring.

This recipe & combination is one of my favourites. I hope you love it too!

 

I N G R E D I E N T S:


 ½ cup of rolled oats.
1 large ripe banana.
¾ of almond or cashew milk.
2 tbsp of chia seeds.
1 tbsp of natural peanut butter.


D I R E C T I O N S: 

1. In a bowl, mash the ripe banana and stir in the almond/cashew milk.

2. Add the oats and chia seeds to the wet mixture and blen
d until completely mixed together.

3.  Add the peanut butter and fold into the oats.

4. Place the oats into a sealable container or jar to refrigerate overnight (or at least 2-3 hours).
 
 
T I P S:

  • Adding more oats or chia seeds can make the mixture more solid if you find it is too runny.
  • I like to top my oats with sliced banana, a drizzle of peanut butter and some chopped nuts. 

Vegan Peanut Butter & Banana Overnight Oats
